Papa’s Peaches
This recipe is inspired by my Grandpa Jack. He always loved fresh produce, especially fruit. One of my favorite things about visiting my grandparents as a kid was the fresh produce. Watermelon picked the same day, fresh corn, tomatoes, grapes and of course peaches. I made these peaches for my Grandpa for dessert on a visit and I remember how much he loved them. One of my final memories of him and I think of him every time I make these. As simple as they are, they are special to me. They are a reminder of how superb simple things can be. Simple things done well can be the most memorable and flavorful. I hope you enjoy these as much as my family and me.
Makes 8 halves:
4 White peaches (halved and pitts removed)
2 tablespoons unsalted butter (melted)
sugar for sprinkling
vanilla ice cream
high quality balsamic vinegar or white balsamic, I use a light passionfruit vinegar (optional)
basil leaves (mint or lemon verbena would work well too!)
To make:
I make these when I use a charcoal grill, I put them on after I have cooked the meats or whatever when the coals are still hot enough to give a good sear. You can also do them on a gas grill on a high heat for searing. Halve the peaches and scoop out pit. Try to keep halves in tact as you this. If needed, run sharp knife under pit to release it. Brush with melted butter and sprinkle with sugar. Place on hot part of grill. Depending on how hot your grill is cook them a few minutes or more to get marks on the peaches. Set to cooler side of grill and cook an additional 3-4 minutes. Let rest 10 minutes or more. Scoop vanilla ice cream onto each halve. Drizzle vinegar over and place basil on ice cream or to the side.
