Chipotle pepper Turkey Burgers

These are a weeknight favorite. They are spicy and smoky and so easy. You can absolutely serve these on buns. I serve them over cous cous, salad and pico de gall0 on top. Super fresh tasting and still light for hot summer weather. If you are not a spicy fan definitely cut back on the peppers, also each can tends to be different as far as spicy goes. I recommend trying a piece of the pepper to kn0w what you are getting into.

Makes 4- 6 ounce burgers

1 1/2 pounds ground turkey

1 egg

1/2 cup bread crumbs

2-3 canned adobo chipotle peppers (diced, try them out for spicy before you put them in!)

1 teaspoon salt

1/2 teaspoon pepper

To make:

Place all ingredients in a bowl and mix with hands. Separate into 4 even patties, (I eye-ball them but a scale would be helpful here).

Heat a skillet or cast iron pan over medium high heat. Add 1 tablespoon vegetable oil, once heated, add patties. Cook 3-4 minutes each side to brown. Once browned, cover with lid and turn down heat until internal temperature is 155-160.

Let rest 5 minutes before serving. I serve them with avocado and pico de gallo over cous cous. On a bun, traditional style would be delicious as well!
