Roasted almonds

These are so nice to have around as a snack or to-go food. A super easy and flavorful nibble that is super healthy. I take them on outdoor adventures or road trips. This is my favorite version, but you can really season them however you like!

Makes 1 1/2 cups:

1 1/2 cups raw whole almonds

3 tablespoons olive oil

2 teaspoons harissa seasoning (this has started to become readily available but if you can find it substitute with 2 teaspoon smoked paprika, 1 teaspoon cumin and 1/2 teaspoon red pepper flake)

1/2 teaspoon salt

Pre heat oven to 300. Line a large baking sheet with parchment. In medium bowl, mix all ingredients together. Place on baking sheet into single layer. Bake about 20 minutes, shaking baking tray every five minutes or so. Adjust seasoning if needed. Set aside to cool completely before cooling.
