Baked Oatmeal
I make this when I have overnight guests. It is always a crowd pleaser and takes the challenge out of breakfast. I also take it hiking, it holds together well and is perfect for a long hike with complex carbs for energy. It is so easy and and you can make it at the beginning of the week for a quick and super healthy breakfast.
Makes 10 servings:
2 cups old fashioned rolled oats
2 cups milk (I use coconut but any milk can be used)
2 teaspoons vanilla
1/2 teaspoon salt
1 teaspoon cinnamon (optional)
1/2 cup maple syrup
2 apples (unpeeled, diced or grated)
1/2 cup nuts (whichever is your favorite to go with oatmeal, pecan, almond, walnut, chopped)
1/2 cup dried fruit or berries (I use a mix of dried blueberries, raisins and cranberries)
Pre- heat oven to 350. Grease a 9x13 casserole or baking dish. In large bowl place all ingredients and mix well. Pour into baking dish. Bake 35-40 minutes or until golden brown on top and firm to touch.
Serve with yogurt or milk and any other favorite oatmeal toppings. I also love mine served warm with a tablespoon of peanut butter on top!
