Winter salad with candied walnuts and apple
I love apples. I could eat apples in almost anything. Pair them with candied walnuts, I’m in love. I don’t love salads. I eat them and kind of enjoy them, but they are not my favorite. I have found ways to make salads exciting for me. This is a favorite that I eat all winter and actually really enjoy!
Makes 4 side salad servings:
1 cup or 6 ounces raw walnuts
3 tablespoons maple syrup
1 apple (chopped or cut into matchsticks)
1 bag or 8 ounces baby kale
3 tablespoons balsamic vinegar
6 tablespoons mild olive oil
1 shallot (minced)
2 teaspoons honey
salt and pepper
Pre heat oven to 250. Place parchment on a baking sheet. Toss walnuts with maples syrup in small bowl. Add to baking sheet. Bake about 20-25 minutes or until nuts are toasted and syrup is absorbed. You may need to stir a few times. Set aside to cool.
In jar or with tight fitting lid add vinegar, olive oil, honey, shallot and a pinch of salt and pepper. Shake well to bring together. Taste and adjust seasoning.
Place kale in large salad bowl, add apples and nuts. Toss and add dressing. Serve.
