Southwest Quinoa Salad

I have made this quinoa salad for years! If you make the quinoa ahead it comes together in about 15 minutes. It is always a crowd favorite. It is perfect for summer. It is a refreshing cold salad with substance. I like quinoa because it has a earthy flavor that pairs well with so many flavors. It is also a complete plant protein so this dish is packed with good for you things. I serve it as a salad to BBQ chicken. It really is tasty by itself too!

Makes 6-8 side salad servings

16 ounces quinoa

4 cups water

For dressing:

1/2 cup lime juice

1/2- 2/3 cup mild olive oil

2 teaspoon cumin

1/2 teaspoon crushed red pepper (omit if you don’t want it spicy)

1 teaspoon salt

1/2 teaspoon pepper

For salad:

1 16 ounce can black beans (drained, rinsed)

1 bunch cilantro (chopped fine)

1 bunch green onions (chopped fine)

Prepare quinoa according to package instructions. Cool completely.

Combine all dressing ingredients together in small jar with lid, or small bowl. Mix well to bring together.

In large bowl add cooled quinoa, black beans, cilantro, green onions, add dressing last. Toss and adjust seasoning if needed. Enjoy!
