Mom’s Peach Cobbler
Everyone needs a simple peach cobbler. This is it. This is my Mom’s recipe and is never fail. It is so easy and quick and is perfect to take to a BBQ. You can use your oven, but I try to plan it so I use my grill after I have cooked the main event. Feel free to add other fruits or berries if desired.
Makes 8-10 servings:
4-5 medium white peaches
1 cup all purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
2 teaspoons vanilla
8 tablespoons (1 stick) butter- cut into pieces
Vanilla ice cream for serving
Pre heat oven to 350. Grease a 9x13 baking dish.
Fill large pot with water and bring to boil. In the bottom of each peach make an x with a paring knife. Place peaches in boiling water for 30 seconds or until skins start to pull away from flesh. Remove and place in cold water and immediately peel skins away. Once cool enough to handle cut in half and remove pitts. Cut into 1/4 inch slices.
Place 1/2 of peaches in bottom of baking dish. In medium bowl place flour, sugar, baking powder and salt. Mix well, then add milk and vanilla. Mix well. Pour 1/2 of batter over peaches. Place the rest of the peaches on top of batter and pour the rest of the batter over the peaches. This batter is on the thick side so you may need to place spoon fulls through out and smooth with a spatula.
Place in oven or on grill. Cook about 20 minutes and then place butter pieces evenly on top of cobbler. Bake another 10 minutes or until bubbly and golden brown.
Remove and let cool. Serve warm or at room temperature with ice cream. My favorite is the next day!
