Sweet Potato and Sausage Hash
This is a super satisfying and comforting weeknight dinner. It is super easy and quick. I love the leftovers the next day too! I use a chicken sausage with jalapeño here. You could use a kielbasa or andouille as well.
Makes 4 servings:
2 large sweet potatoes (peeled and diced into 1/2 inch cubes)
2 tablespoons olive oil
salt and pepper
15 ounce package sausage or 5 links (cut in half lengthwise, then cut into 1/4 inch slices)
1 bunch cilantro (chopped)
5 green onions (white and green parts sliced)
2-3 ounces cotija cheese (crumbled)
Pre heat oven to 350. Toss diced sweet potato, olive oil and a generous seasoning of salt and pepper in a large bowl. Place on baking sheet. Bake in oven until tender, turning or stirring every so often. About 20 minutes.
Heat large skillet over medium high heat and add 1 tablespoon vegetable oil. once heated add sliced sausage and cook to brown through. Stir frequently to brown as much as possible.
In large bowl add sweet potatoes, sausage, cilantro, green onions and cheese. Toss to combine and serve!
